What’s better than a brownie? Cheesecake Oreo Brownies, that’s what! This recipe is for gooey chocolate brownies with a layer of Oreo cookies and a creamy cheesecake topping, it's a must-try!

This is the perfect recipe to make when you’re looking to please a chocolate-loving crowd with something a little different. They are ideal to make for birthdays, or as an easy dessert to feed a few!

Ingredients
To make this Oreo cheesecake brownies recipe you will need the simple ingredients listed below. Remember to always use fresh room temperature ingredients when baking.
- Chocolate
- Unsalted butter
- Superfine sugar
- Cake flour
- Salt
- Coffee granules
- Extra-large eggs
- Oreos
- Cream cheese
- Vanilla extract
- Heavy cream
Chocolate – I like using a combination of milk and dark chocolate when making brownies, you can do the same or choose to use one or the other. You can use chocolate bars or a mix of sweet and semi-sweet chocolate chips.
Unsalted butter – use unsalted butter for this recipe.
Cake flour – use cake flour or all-purpose flour to make these brownies.
Coffee granules – use good quality and great-tasting instant coffee granules.
Extra-large eggs – out of their shell, the eggs I use weigh 56 grams, if you aren’t sure if you have the same eggs – weigh the eggs you have and adjust accordingly. Make sure your eggs are at room temperature, this is especially important for the meringue topping.
Cream cheese – choose a full-fat cream cheese for this recipe. I used Philadelphia cream cheese.
Vanilla extract – for this recipe use a quality vanilla extract, if you can’t find any, vanilla essence will also work.
Whipping cream - Heavy cream refers to creams that have a fat content higher than 36%, in South Africa, these creams are often called whipping cream. Please don’t make the mistake of confusing this with double thick cream, it isn’t the same!

Instructions
To make these delicious Oreo cheesecake brownies follow the simple instructions below. First, you will be making the fudgy brownie base and then the creamy cheesecake filling.
Instructions for brownie layer
STEP 1: Preheat the oven. Preheat the oven to 160C (320F) and line a rectangular baking tin 35x28x7cm (14x11x3 inches) with oil and parchment paper.
STEP 2: Melt butter and chocolate. Add the chopped butter and both types of chocolate to a heatproof bowl set over a saucepan of simmering water. Allow the chocolate and butter to melt while stirring occasionally. Once melted, remove the melted butter and chocolate mixture from the heat and set aside.
STEP 3: Combine eggs, coffee, and sugar. Add the eggs, coffee granules, and sugar to a mixing bowl and stir to combine. Do not beat.
STEP 4: Combine egg and chocolate mixture. Add the slightly cooled chocolate mixture to the egg mixture and mix with a rubber spatula.
STEP 5: Add flour and salt. Sift together the flour and salt, then add the dry ingredients to the brownie mixture and stir to combine.
STEP 6: Pour the batter into the prepared pan. Pour the brownie batter into the prepared baking tin and smooth it over with the back of a spoon to create an even layer.
STEP 7: Layer Oreos. Place a layer of Oreos on top of the brownie batter.
Instructions for cheesecake
STEP 1: Beat cream cheese and sugar. In a bowl of an electric mixer fitted with a paddle attachment, add the sugar and the cubed cream cheese. Beat at medium speed until smooth and well combined.
STEP 2: Add the eggs. With the mixer’s motor running at medium speed, add the eggs to the cream cheese mixture one at a time, ensuring to scrape down the sides of the bowl between each addition.
STEP 3: Add the cream and vanilla. Add the vanilla extract and whipping cream to the cheesecake batter and beat at medium-high speed for about 2 minutes. Pour the cheesecake mixture over the brownie and Oreo layer.
STEP 4: Add crushed Oreos. Sprinkle a layer of crushed Oreos over the cheesecake layer.
STEP 5: Bake. Bake the Oreo Cheesecake Brownies in a preheated oven for 30 minutes or until the cheesecake layer has set and pulled away slightly from the tin. Switch off the oven and allow the brownies to cool in the oven for 2 hours before covering the tray with aluminum foil and refrigerating overnight.
STEP 6: Slice. Remove the brownies from the tin and place them onto a serving plate, slice into squares of about 5cm (2 inches) serve with extra crushed Oreos, and enjoy!
Hint: For a lump-free cheesecake batter make sure you are using room-temperature cream cheese.
Variations
You can adapt this brownie cheesecake recipe to suit your taste! So, switch out the classic Oreos for chocolate-filled Oreos, or leave out the Oreos completely and serve this dessert with fresh berries or a decadent chocolate sauce.

To make these delicious Oreo cream cheese brownies you will need an electric stand mixer or hand mixer. You will also need a brownie tin and a heatproof bowl for melting the chocolate and butter.
Storage
Once baked, store any leftover brownies in an airtight container in the fridge for up to 4 days.
You can freeze any leftover baked brownies by wrapping them in a layer of plastic wrap and freezing them for up to two months. Thaw them in the fridge overnight before bringing them to room temperature.
