Key Ingredients

- Brown sugar - I love the caramel flavor it gives to loaf cakes. Muscavado will also work, as will white sugar if this is all you have.
- Cake flour - Cake flour or all-purpose flour will work for this recipe. If using self-rising flour, leave out the baking powder and baking soda.
- Mashed bananas - Make sure you are using overripe bananas to ensure your loaf has a strong banana flavor. This recipe needs 3 to 5 bananas, depending on the size.
- Pecans - Use pecans or walnuts for this easy banana loaf recipe. You can also make this banana bread without nuts if you prefer.

How to Make Banana Bread

- Step 1: Preheat the oven to 180°C (350°F) and line the sides and bottom of the 20x10x6cm (8x4x3 inches) loaf pan with melted butter and baking paper. Add the softened butter and the sugar to a bowl of an electric mixer fitted with a paddle attachment. Cream the butter and sugar until light and fluffy, about 4 minutes.

- Step 2: Add the eggs, one at a time, to the batter, scraping down the sides of the bowl between each addition before mixing again. Once added, add the vanilla and mix again.

- Step 3: Sift the flour, baking powder, baking soda, cinnamon, and salt into a large bowl. Add the mashed bananas and the flour mixture to the batter by alternating between the two. Starting with the flour and ending with the bananas. Scrape down the sides of the bowl and mix again to ensure everything is well combined and lump-free.

- Step 4: Add the chopped pecans to the cake batter and stir using a rubber spatula.

- Step 5: Pour the banana bread batter into the prepared loaf tin.

- Step 6: Bake in a preheated oven for about 50 minutes or until a skewer inserted into the center of the loaf comes out clean and the loaf is golden brown. Allow the banana bread to cool in the tin for 15 minutes before removing it and placing it onto a wire rack to cool.

Notes
- For lump-free cream cheese frosting, make sure the butter and cream cheese are at room temperature.
- If the banana bread isn't yet cooked in the middle but the top is browning too quickly, you can place a sheet of tin foil over the top of the loaf to prevent it from browning further.
- Mash the bananas using a fork rather than pulsing them in a food processor. This way, you'll get chunks of banana dotted throughout the baked loaf.
