Few desserts are as easy to make and as delicious as a fruit crumble. This Apple and Blackberry Crumble comes together in no time at all and is a delicious treat at the end of a meal.

I love making crumbles in winter and summer, using what seasonal fruit is available. This version with juicy blackberries and thinly sliced apples makes the perfect pudding.

Ingredients
You will need the simple ingredients listed below to make this apple blackberry crumble recipe. Remember always to use fresh, room temperature ingredients when baking.

- Blackberries
- Light brown sugar
- Cornflour
- Lemon zest
- Lemon juice
- Unsalted butter
- Sunflower oil
- Granulated white sugar
- Extra-large egg
- Cake flour
- Rolled oats
- Salt
- Baking powder
Apples - For this recipe, I used Granny Smith apples and they worked wonderfully. Other apple variations you can try are Pink Lady or Honey Crisp. You want to choose a firm flesh apple that will hold its shape during cooking and baking. I recommend using fresh apples not tinned apples.
Blackberries – for this recipe I used fresh blackberries, you can however use other berries like mulberries, raspberries, or blueberries. For this recipe, frozen berries will also work.
Extra-large eggs – if you don’t have extra large eggs, you can use large eggs. But you will need to weigh the eggs without the shell. You are looking to have about 64grams of raw egg.
Cake flour - depending on where you live, you will be using either cake flour, plain flour, or all-purpose flour for this recipe. For this recipe adding cornflour to to plain flour to make cake flour wont be necessary.

Instructions
For this recipe, you will start by making the crumble topping, and then the blackberry and apple mixture.
STEP 1: Cream oil, butter, and sugar. Add the oil, butter, and sugar to a bowl of an electric mixer fitted with a paddle attachment. Beat at medium-high speed until light in color and well creamed—about 2 to 3 minutes.
STEP 2: Add the egg. With the motor of the mixer running add the egg, and beat until well combined. Scrape down the sides of the bowl and mix again.
STEP 3: Add dry ingredients. Sift together the flour, baking powder, and salt. Add this as well as the oats to the egg and sugar mixture at once and beat at low speed until the dough is just combined.
STEP 4: Chill. Wrap the dough in plastic wrap and place it into the fridge to firm up until needed.
STEP 5: Make the filling. Peel and core the apples, then slice them thinly. Add the sliced apples to a large mixing bowl with the berries, zest, lemon juice, brown sugar, and corn flour. Mix until the fruit is coated with the other ingredients.
STEP 6: Bake. Pour the fruit filling into a buttered oven dish and press the fruit mixture down so that it is in an even layer. Grate the chilled pastry over the apple mixture and bake in a preheated oven for about 40 minutes at 180C (350F) or until golden brown. Serve warm with ice cream or custard.
Hint: be sure to spread the crumble mix evenly over the surface of the apples before baking.

For this recipe, if you don’t have blackberries, you can use other berries instead. Try raspberries, mulberries, or blueberries as an alternative. Frozen berries will also work in this recipe.

For this recipe, you will need to make the pastry with a stand mixer, electric hand mixer, or in a food processor.
Storage
I recommended serving this crumble soon after it has baked. Any leftover crumble can be stored in an airtight container in the fridge for up to 4 days. To serve leftovers, reheat the crumble in the microwave or oven in an ovenproof dish and serve with ice cream or custard.
This crumble recipe can be frozen, before or after baking. Wrap the oven dish in cling film and freeze for up to 2 months. Thaw in the fridge overnight before baking or reheating in the oven.

- Use a big enough baking dish otherwise, the filling will bubble over during baking

Apple Filling
- 780 grams green apples about 10 small apples
- 250 grams blackberries
- 1 tablespoon lemon zest
- 2 tablespoon lemon juice
- 120 grams light brown sugar
