    Chocolate Fudge Pie with Chocolate Sauce

    This is a simple dessert recipe for the most decadent homemade chocolate pie you will ever make. This easy recipe for a chocolate fudge pie no crust is served with a chocolate sauce made from real chocolate and is best served with vanilla ice cream.

    This chocolate fudge pie no crust takes about 15 minutes to make and 35 minutes to bake and trust me it will be time well spent.  

    Before I took over the dessert role in the kitchen, my mom used to make this chocolate fudge pie no crust for almost every special occasion. And that's because it is the best dessert, easy to make and it's really delicious. It tastes like Christmas, Easter and Friday night dinner club all at once.  

    What is a Chocolate Fudge Pie?

    A chocolate fudge pie is similar to a brownie. Think of this as a recipe for an oversized brownie that you slice like a cake. Like brownies, this recipe has a high volume of chocolate, butter and sugar in comparison to the flour needed.   This means that the final product is dense and fudgy rather than light and cake-like. The chocolate pie will have a crust on the top and a soft gooey centre.  

    How to Make Chocolate Fudge Pie No Crust

    This is a simple recipe that is easy to follow. I use an electric mixer fitted with a paddle attachment to make this chocolate fudge pie no crust recipe.  

    The butter, sugar and eggs are added to the bowl of the electric mixer. And beat at medium-high speed until the mixture is light in colour and fluffy. This can take about 5 minutes if your butter is at the correct consistency. It will take longer if your butter is still too cold.  

    Next, the vanilla, flour and salt are added and mixed until just combined. The chocolate is added next. Be sure to monitor the temperature of the chocolate before adding it, as eggs are very temperature sensitive.  

    Lastly, fold through the chopped walnuts. And pour the batter into a prepared oven-proof dish. Bake the pie in a preheated oven, ensuring that the oven is set at the correct temperature. The pie should take about 35 minutes to bake, check if it is ready by inserting a skewer into the centre.

    How to Know When a Chocolate Fudge Pie is Ready?  

    When I went to pastry school, one of the very first things I learned was, competent bakers, know when to take their bakes out of the oven. We all rely on a time guideline but remember all ovens are different. So, you need to use visual cues as well!

    Make sure you are using an oven thermometer to test the temperature of your oven. This chocolate fudge pie recipe should take bout 35 minutes to bake at 180C.    

    During baking the pie will rise considerably and then sink again, forming a crust. You need to make sure that the crust has formed on the pie before removing it from the oven.   You can also use a skewer to test for doneness. Insert the skewer into the centre of the chocolate pie and see what trails on the skewer. The skewer should come out relatively clean but not completely as this could mean you are overbaking your pie.  

    The most reliable way to tell whether or not your chocolate pie is baked is to look for the crust and to see that the sides of the pie have slightly pulled away from the baking tin.  

    Tips For Making the Perfect Chocolate Fudge Pie  

    As with all baking recipes, there are a few things to keep in mind when baking this chocolate fudge pie no crust. These are,  

    • Understand your oven. Knowing the true temperature of your oven is the first step to becoming a better baker. I always use an oven thermometer to ensure that I am baking my recipes at the correct heat.
    • Make sure all the ingredients are at room temperature. This is especially important for the butter. The butter needs to be soft.
    • Use the correct size oven dish, or similar. If you don't have the same size dish, bear in mind that you may need to adjust the bake time for this recipe.
    • Use quality good tasting chocolate as this will dramatically affect the taste of this chocolate fudge pie no crust
    • When making the pie, wait for the melted chocolate to cool slightly before adding it to the egg mixture. This is because you don't want the eggs in the batter to cook and become grainy.
    • The pie is ready to be removed from the oven once a crust has formed. And the centre appears to be set. Insert a skewer into the centre of the pie, is should come out relatively clean. See discussion above.
    • This chocolate pie will rise in the oven, and fall and crack once cooled. Expect this to happen.

    Ingredients for Chocolate Fudge Pie  

    The ingredients needed for this recipe are very basic. As discussed, make sure that you are using good-tasting quality chocolate. I prefer to use a mixture of dark and milk chocolate but you can use all dark chocolate if you prefer a less sweet dessert. The brands that I choose to buy for this recipe are Cadbury's milk chocolate and Lindt 80% dark chocolate.   Ingredients needed,

    • Granulated sugar
    • Unsalted butter
    • Extra large eggs
    • Full cream milk
    • Vanilla extract
    • Cake flour
    • Salt
    • Milk and dark chocolate
    • Walnuts
    • Whipping cream

    If you are allergic to nuts, or just don't like them, choose not to add them! Also, if you are finding it hard to source walnuts, pecans will work just as well.  

    Chocolate Fudge Pie No Crust   

    The hardest part about baking pies is the crust, right? Making the dough, rolling it out, lining the tin, blind baking. There are so many steps that go into getting a pie crust right! But this recipe is for a crustless pie, which makes baking this chocolate pie all the easier.  

    Do You Need to Keep Chocolate Fudge Pie in the Fridge?    

    I choose to keep any leftovers of this crustless chocolate pie in the fridge because it is pretty warm where I live. Also, since there is a high ratio of butter to flour in this recipe, I advise keeping this dessert in the fridge.  

    To reserve the dessert, put the pie in the oven for a few minutes to slightly warm it up. Warm up the chocolate fudge sauce in the microwave. Slice the pie, add a scoop of vanilla ice cream and a generous amount of chocolate sauce. Perfection.

    Ingredients
      

    Chocolate Fudge Pie No Crust

    • 230 grams granulated sugar
    • 115 grams unsalted butter
    • 2 extra large eggs
    • 25 ml milk
    • 1 teaspoon vanilla extract
    • 40 grams cake flour
    • pinch of salt
    • 30 grams milk chocolate, melted
    • 30 grams dark chocolate, melted
    • 100 grams walnuts, chopped

    Chocolate Fudge Sauce

    • 80 grams unsalted butter
    • 60 grams dark chocolate
    • 150 grams granulated sugar
    • 250 ml whipping cream
    • 2 teaspoon vanilla extract
    • pinch of salt
    • vanilla ice cream, to serve

    Instructions
     

    Chocolate Fudge Pie No Crust

    • Preheat the oven to 180°C and butter a 22cm diameter round pie dish, loose bottom is preferable.
    • In the bowl of an electric mixer fitted with a paddle attachment, add the sugar, butter, and eggs. Beat at medium-high speed until the mixer is light in colour and creamy. This can take 5 minutes.
    • Sift the flour and salt together in a separate bowl.
    • At a low speed, add the milk, vanilla, and flour mixture to the egg mixture. Blend until just combined.
    • Melt the two types of chocolate together over a double boiler or in the microwave. Allow the chocolate to cool slightly before adding it in a steady stream to the egg and flour mixture with the motor running at low speed.
    • Fold through the chopped walnuts with a wooden spoon.
    • Pour the mixture into the prepared tin and bake in the preheated oven for about 35 minutes. Allow the fudge pie to cool for about 30 minutes before removing the pie from the tin.

    Chocolate Fudge Sauce

    • In a pot set over medium heat, add the butter and chocolate. Allow the butter and chocolate to melt before adding the sugar and cream.
    • Stir occasionally until the sugar has melted. Remove the sauce from the heat and stir in the salt and vanilla. Pour the sauce into a glass jug.
    • To serve, slice the chocolate pie and serve with vanilla ice cream and hot fudge sauce. Enjoy!
